Homemade Chili, Tuesday's Treat (8/26)

I love a good chili. Over the years I've experimented and come up with what is my favorite chili recipe. Simple and spicy, it goes really well with buttery cornbread and a tall glass of sweet tea. 

Ingredients
  • 1 pound ground beef
  • 1 medium yellow onion diced
  • 1 green bell pepper diced
  • 15.5 oz can kidney beans
  • 15.5 oz can cannellini beans (drained)
  • 29 oz can tomato sauce 
  • 2 tbsp chili powder
  • 1 tsp crushed basil
  • 1/2 tsp oregano
  • 1/4 tsp black pepper
  • 1 tsp salt
  • 1/8 tsp ground cayenne pepper
Directions

In a large skillet brown ground beef. While ground beef is cooking dice onion and bell pepper. 

Combine spices thoroughly in small bowl. 

Add browned ground beef, onion, bell pepper, kidney beans w/liquid, drained cannellini beans, almost all of the can of tomato sauce (more of less depending on how thick you want your chili), and spice mixture. Bring to a simmer on medium then turn down to medium-low and cook for 2-3 hours or until onions and peppers are cooked through.

Make Your Own Play Dough! (Friday Funday 8/22)

One of my favorite things as a kid was when my mom would make play dough. We didn't have a lot of money so we hardly ever got new toys. My mom was resourceful though, so we always had some sort of entertainment.

Start off with getting the ingredients together:

  • 1 cup flour
  • 1/3 cup salt
  • 2 tbsp cream of tartar
  • 1/4 cup water
  • 1 tbsp vegetable oil
  • food coloring 
Start off by mixing the dry ingredients together in a medium bowl. 

While stirring, add water and vegetable oil to the dry mix. Add more flour if it is too sticky and more water if it is too dry. 

At this stage it needed more water. So I kept adding until I got the right consistency. 

Mix in added ingredients. Food coloring, glitter or texture elements may be added at this point. Keep mixing until the everything is evenly distributed. 

The best way to add color is to fold and knead. Just keep folding and kneading. Most of the color should stay in the dough and not get on your hands. But if you don't want food coloring on your hands at all I would recommend using gloves.

Karma Can Be a Real B*tch

Years ago I made the mistake of getting re-acquainted with a flame from high school. He complained about his wife, life, etc. I became sympathetic and got a little too involved in his life. He lived a few states away from me so there was no cheating going on. Just a lot of virtual crying on my shoulder. Apparently (according to him), his wife became terrified he was going to leave so she got herself pregnant to keep him. I was flabbergasted. I was still caught up in feeling sorry for him though when I really should not have.

He ended up deploying to Iraq and while there kept up emailing me and even calling me. He told me about a girl he had been checking out and I know from what he said he did more than check her out. I know he did something.

I started to get a little irritated at his attitude. He seemed to be trying to get me and his wife to be friends. He even mentioned a plural marriage! *gag* I wanted him to be honest with his wife. He never could be. So, I started talking to her more and more and started getting the entire story. He was not so innocent as he made himself out to be...

He had set up a file exchange server for us to exchange larger files and I decided to do some digging. To my utter disgust, I found a conversation that seemed to be between him and an underage girl asking for pictures. I couldn't believe it. It made me so sick.

While he was on his way back from deployment I told his wife all the stuff he had been saying and doing. Blew it wide open and left them to deal with each other. His wife finally knew what he had been thinking and he was going to have to face the music. I never tried to recontact them. They had a lot of vitriol towards me. (Understandable given the circumstances).

That was until a couple months ago. I started thinking about his wife and if she was doing okay. She has some health issues and I never had any ill will towards her. I sent a short message just asking how things were and I got a wall of text back from him telling me off. Wow.

Well... I decided to do a little more digging to see how life had been treating them. It is way worse than I could have imagined. Karma has really slapped this guy down hard. And he deserves it. Totally and completely. I feel terrible for his wife and their child though. They've lost everything except each other. I found his blog and he is still living in a dream world.

Seeing all this kind of highlighted to me how much I have grown since just 2006-2008 when I was talking to him. I've moved on with my life, grown emotionally and spiritually, and am where I want to be. Ryan may not be super passionate but he is stable. He is honest and committed. I definitely have a lot more growing to do, but at least I know I'm heading in the right direction.

Life is long. Even the smallest pebble can create ripples that travel for a long time and can have unexpected consequences.
